Happy Wednesday, friends! It’s been awhile since I have put together a little “Day in the Life” type of post, and since I’m currently on Spring Break I figured this would be a good time for that. I have thoroughly been enjoying the extra hours of sleep and I may or may not be praying that this week slows down quite a bit. So, let’s look at my day yesterday.
Once I woke up and got my coffee and wits about me, I threw together some chili for dinner in the crockpot. I used the 5 Ingredient Chili recipe from Gimme Some Oven, but shhh…I actually added a couple extra ingredients. Mainly garlic because, come on… I love me some garlic. But I also added a few shakes of cumin and a teeny bit of cayenne pepper.
Once that was put together, I put myself together and took my mom to lunch in Charlotte! Tupelo Honey Cafe is a delicious restaurant that serves amazing Southern dishes and is an Asheville, NC original, but they’ve expanded quite a bit over the years. I’ve been here several times, but I wanted to share it with my mom! I couldn’t help but snap a quick photo of Uptown Charlotte on the way, it was just a beautiful day and the city was showing off!
On our way out, I just couldn’t resist snapping a few pictures on the “porch” since Tupelo Honey is on the second floor of their building and these couches looked so inviting.
After lunch, mom and I ran a few errands and I worked on some organizational things on my to-do list once we got home. Once my Dad got off work, we went for a walk/jog together and caught the beautiful sunset coming through the trees. I pray that I am always able to stop and savor the beauty of the sunset. God definitely shows off his beauty with these sunrises and sunsets of his.
Once we got home, it was time to enjoy the delicious chili that I had thrown together that morning! I think I will make a few tweaks next time I make it, but it was definitely a winner!
